Two green salads of torn romaine lettuce, chopped tomato, red and green bell pepper, sliced cucumber, carrot peelings, and chickpeas. This week’s meal preparation: Green salads (just add healthy fats or protein for a complete meal,) cleaned and prepared stir-fry vegetables, mushroom and garlic brown rice with chickpeas, and marinated tofu (combine all 3 elements for a simple, healthy dinner,) and chocolate raspberry oatmeal bars for a convenient snack.
